Bird-in-Hand Butterscotch Cheesecake

1/3 cup butter melted
1 1/2 cups graham cracker crumbs
1/3 cup packed brown sugar
1 (14 oz.) can sweetened condensed milk
3/4 cup cold water
1 4 serving size pkg butterscotch pudding and pie filling mix
3 8-oz. pkgs. cream cheese
3 eggs
1 teaspoon vanilla
whipped cream
crushed butterscotch candies
Recipe
Preheat oven to 375º
Combine butter ,crumbs, and sugar. Press into the bottom of a 9 inch springform pan.
In a medium saucepan combine condensed milk and water, mix well, add the pudding mix, over medium heat cook and stir until thick and bubbly.
In a large mixing bowl , beat the softened cream cheese until fluffy. Beat in eggs and vanilla, now the pudding mixture. Blend well then pour into the prepared crust.
Bake 50 minutes or until golden brown around the edge. NOTE the center will be soft!
Cool to room temperature. Chill, garnish with whipped cream, and crushed candy if you wish.
