    1 Cup butter, softened
    2 Cups sugar, sifted
    4 Large eggs, room temperature
    3 Cups cake flour, measured after sifting
    3 Tsp baking powder
    1 Tsp ground cinnamon
    1/8Tsp salt
    1 Tsp ground cloves
    1 Cup milk
    1 Tsp lemon extract
    1 Tsp grated lemon zest
    1 Cup fairly firm blackberry jam

    Recipe



    Cream butter and sugar until light and fluffy add 2 eggs and beat 4 minutes at high speed.
    Add remaining 2 eggs, one at a time and beat until well blended.
    Sift flour, baking powder, cinnamon, salt and clove together.
    Add flour mixture to creamed mixture alternately with milk, a small amount at a time, ending with flour mixture; beat well.
    Add lemon extract, lemon zest and then the jam.
    Pour batter into 3 greased and floured 9-inch layer pans.
    Bake at 350º for 20 to 25 minutes or until cake tests done.
    Cool in pans on wire rack for 15 minutes.
    Remove from pans and allow to cool completely before icing.

    Berry Icing

    1 Unbeaten egg white
    1 Cup granulated sugar
    3 Tbsp mashed fresh berries
    1/2 Tsp baking powder
    1/2 Tsp flavoring

    Place egg white, sugar and berries into the top of a double boiler; place over boiling water and cook and beat with rotary beater for 7-minutes.
    Add the baking powder and flavoring.
    Remove from heat; beat until thick and spread on cake.
