    Bourbon Carrot Cake with Bourbon Glaze

    List of Ingredients




    Beat until well mixed:
    2/3 C oil
    1 C sugar.

    Beat into the above mixture:
    2 eggs.

    Stir in:
    1 C flour
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon
    1/4 tsp nutmeg.

    Add and mix well:
    3 Tbl Bourbon
    1 1/2 C grated carrots
    1 C chopped pecans.

    Pour into greased and floured 9x9-inch cake pan.
    Bake at 325 F for 40 minutes.
    Cool in pan.

    Bourbon glaze

    Blend together:
    1 C powdered sugar
    2 Tbl hot water
    1 Tbl Bourbon.

    Spread over cooled cake.
