Buttermilk Pineapple Carrot Cake

3 eggs
1/2 cup oil
3/4 c buttermilk
2 tsp vanilla
2 c flour
1-1/2 c sugar
2 tsp cinnamon
1/2 tsp salt
1 (8-oz) can crushed pineapple, well drained
2 c shredded carrots
1 c chopped nuts
1 c raisins Recipe
Beat eggs with oil, buttermilk and vanilla.
Combine dry ingredients and add to egg mixture, stirring till smooth.
Mix pineapple, carrots, nuts and raisins into mixture.
Pour into lightly greased 9x13 pan.
Bake 350° for 45 minutes or until cake tests done.
Remove from oven and pierce top of cake with fork several times.
Slowly pour hot Buttermilk Syrup over cake.
Buttermilk Syrup
In pan combine 2/3 c sugar, 1/4 tsp soda, 1/3 c buttermilk, 1/3 c butter and 2 tsp light corn syrup.
Bring to boil and boil for 5 minutes.
Remove from heat and add 1/2 tsp vanilla.
