    Carrot Pecan Blender Cake

    1 C. pecans
    1-1/4 C. salad oil
    4 eggs
    2 C. sugar
    2 t. cinnamon
    1 t. salt
    3 C. sliced raw carrots
    2 C. flour
    1 t. soda
    2 t. baking powder
    10 inch tube pan

    Recipe



    Chop pecans fine in blender, set aside.
    In blender container, add salad oil, eggs, sugar, cinnamon and salt.
    Blend for 5 seconds, add gradually the sliced carrots.
    Blend just until grated.
    Pour over in mixing bowl, with flour, soda & baking powder.
    Mix well and pour into an oiled pan.
    Bake at 325° about 1 hr & 10 minutes
    Good with any butter icing, or with just powdered sugar sprinkled on top.
