    Cherry Lattice Coffee Cake

    1 pkg active dry yeast
    1/4 c warm water (110°)
    3/4 c butter
    1/3 c sugar
    1 tsp salt
    4 eggs
    4 c flour
    3/4 c light cream
    Cherry Filling
    1/4 c flour
    1 tsp water

    Recipe



    Soften yeast in warm water.
    In bowl cream butter, sugar & salt.
    Add 3 eggs & 1 egg yolk, 1 at a time. to creamed mixture, beat well after each addition. (Reserve 1 egg white)
    Stir in 4 c flour alternately with yeast & cream. Mix, but do not beat. Set aside 1 c of dough
    Spread remainder in 2 well greased 9x9x2" baking pans.
    Cover both dough squares with Cherry Filling.
    For lattice top, blend 1/4 c flour into reserved dough. Roll out on floured surface to a 9" square. Cut into 16 strips.
    Arrange 8 strips in lattice pattern over Cherry Filling in each pan.
    Beat together reserved egg white and water; brush over strips of dough.
    Cover, let rise in warm place until double.
    Bake 375° for 20-25 minutes.

    Cherry Filling

    Combine 3/4 c cherry preserves, 1/2 c butter, 1/2 c chopped almonds and 1/2 c sugar. Mix well.
    Makes 2 coffee cakes
