Cherry Upside-down Cake

1-1/4 c sifted flour
1-1/4 tsp baking powder
1/4 tsp salt
1-1/4 c sugar, divided
1-3/4 c pitted and drained red cherries, fresh or canned
8 Tbsp butter, divided
1 egg beaten well
1/2 c milk
1 tsp. vanillaRecipe
Sift flour once; measure
Add baking powder, salt, and sugar and sift 3 times
Cream 4 tbsp butter add dry ingredients, egg, milk and vanilla and stir until all flour is dampened, then beat vigorously for 1 minute
Melt 4 Tbsp of butter over low heat in 8x8x2 inch pan or an 8 inch skillet
Add 1/2 c sugar and stir until thoroughly mixed
Arrange cherries atop this mixture
Pour batter over cherries
Bake 350� for 50 min or until done
Loosen cake from sides of the pan
Turn upside down on a dish
Serves 8 to 10
