    Chocolate Chip Oatmeal Cake

    1 3/4 cups boiling water
    1 cup old-fashioned rolled, not instant, oats
    1 3/4 cups all-purpose flour
    1 tsp baking soda
    1 tbsp unsweetened cocoa
    1/2 tsp salt
    1 cup brown sugar
    1 cup granulated sugar
    1/2 cup butter or margarine
    2 eggs, lightly beaten
    1 cup semi-sweet chocolate chips
    1 cup chopped nuts, optional


    Recipe



    In large bowl, pour water over oats and let stand 10 minutes.

    In small bowl, combine flour, baking soda, cocoa and salt; set aside.

    Stir both sugars and butter into oatmeal until butter melts. Add eggs, mixing well. Add flour mixture; blend. Pour batter into greased and lightly floured 10- by 15-inch jelly roll pan.

    Sprinkle chocolate chips and nuts over top. Bake in preheated 350F oven for 20 minutes or until tester comes out clean. Cool on wire rack before cutting into squares.

    Makes 36 bars.
