Chocolate Mint Whipped Cream Cake

1/2 C Cocoa
1 C Hot Water
1/2 C Light Margarine -- Softened
1 1/4 C Sugar
2 Whole Eggs
1 1/3 Cups All-Purpose Flour
1 Tsp. Baking Code
1/4 Tsp. Baking Powder
1/2 Tsp. Salt
1 1/2 Cups Whipping Cream
1 Tbsp. Powdered Sugar
2 Tsp. Mint Extract
Green Paste Food Coloring
Favorite chocolate icing.
Recipe
Combine cocoa and hot water, stirring until smooth. Cream butter;
gradually add sugar, beating well at medium speed of an electric
mixer. Add eggs, one at a time, beating well. Combine flour and
next 3 ingredients; add to creamed mixture alternately ending with
flour mixture. Pour into 3 greased floured 8-9nch round cake pans
Bake at 350F for 15 minutes. Cool in pans 10 minutes; remove
from pans, and cool completely. on wire racks. Spread Whipped
Cream Filling between layers; spread frosting on top and sides.
Garnish, if desire with chocolate mint curls.
Whipped Cream filling:Combine 1 1/2 cups whipping cream, powdered
sugar, mint extract in medium mixing bowl; add a small amount
of food coloring, and beat until soft peaks form.
To Make curls, melt 12 oz. chocolate-flavored candy coating
(squares, wafers, or morsels) in a double boiler placed over hot
water. Pour onto a smooth surface, such as marble or a foil-lined
cookie sheet. Melt 12 oz. vanilla-flavored candy coating.
Stir a small amount of green-paster food coloring into vanilla
coating; pour over chocolate layer. Using a spatula swirl two
colors to create a marbled effect, covering about a 12" X 9" area.
Let stand at room temperature until coating cools and feels slightly
tacky but is not firm. Pull a cheese plane across coating until
curl forms
