Torte:
8 oz. unsweetened chocolate chopped
4 oz semisweet chocolate chopped
1/2 cup water
2 sticks butter- no substitutes, cut in pieces
1 cup sugar
5 extra large eggs at room temperature
1/3 cup sugar
Chocolate glaze:
8 oz heavy cream
8 oz. semi-sweet or dark chocolate chopped
Recipe
In heavy duty saucepan combine water, sugar, stirring to dissolve sugar and bring and boil 2 minutes. Remove from heat. Gradually add the butter &,chocolate stirring until melted, mixed and smooth. In another large bowl beat the 5 eggs with the 1/3 cup of sugar until thick and pale.. Gradually add the chocolate mixture into the eggs, a little at a time mixing to blend well. Pour mixture into a well buttered, and paper lined ( butter paper also ) 9 inch round cake tin. Place in a water bath and bake 350F for 25 to 30 minutes . Place cake tin on cooling rack and cool completely. Refrigerate overnight. Carefully remove cake from pan and invert onto serving plate. Glaze cake with a chocolate ganache if desired or sprinkle with powdered sugar.To make glaze: scald cream and add and melt in chocolate and blend smooth. Pour and spread over cake quickly. Place in refrigerator to harden glaze. If desired you may melt some white chocolate and drizzle over firm glaze as a decoration.
