List of Ingredients
Butter (enough to paint a cake pan)
3/4 cup (1-1/2 sticks) softened butter
3 eggs
2/3 cup sugar
1 teaspoon vanilla extract
2 tablespoons fresh lemon juice
1 cup unbleached white flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups blueberries (fresh or defrosted)
Recipe
1) Preheat the oven to 350°F. Butter an 8-inch-square pan.
2) Break the eggs into a measuring cup and whisk until smooth.
3) In a medium-sized mixing bowl, cream the butter with 2/3 cup sugar until light and fluffy. Add the vanilla, lemon juice, and beaten eggs. Beat well (with a hand-held electric mixer or a whisk) until thoroughly combined.
4) In a separate bowl, stir together the flour, baking powder, and salt.
5) Add the blueberries and stir. It's OK if they get a little
smashed.
6) Turn the batter into the prepared pan and spread it into place.
7) Bake 45 minutes, or until the top is uniformly golden and springy to the touch.
Cool on a rack for at least 15 minutes before serving.
