Festive Pina Colada Cheesecake

• 6 T unsalted butter (melted)
• 1 3/4 c graham cracker crumbs
• 3/4 c chopped toasted pecans
• 1 T sugar
• 3 (8 oz) pkgs cream cheese
• 1/2 c sugar
• 5 lg eggs
• 1 (8 oz) can crushed pineapple (drained)
• 1 c cream of coconut
• 1 c sour cream
• 1 tsp brandy extract
• 4 tsp coconut extract
Recipe
Stir together melted butter, crackers, pecans and one tablespoon of sugar. Press into bottom and sides of greased 10" springform pan. Beat cream cheese and 1/2 c. sugar at medium speed with mixer for 3 minutes, until fluffy. Add eggs one at a time beating well after each addition. Add pineapple, cream of coconut, sour cream, and extracts. Blend well. Pour in pan. Bake at 325° for 1 hour and 15 minutes. Cool. Glaze with 1 T. cornstarch, 1 T. water, 1 (8 oz.) can crushed pineapple drained, 1/4 c. sugar, 2 T. lemon juice. Mix together and cook until thickens. Cool. Pour over cake and chill for 8 hours. Garnish with coconut.
