Graham Cracker Cakes

2 cups graham cracker crumbs
1 cup sugar
1 cup fine coconut
1 egg
1/2 cup shortening
3 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
Recipe
Mix together the graham crumbs, flour, baking powder and salt. Set aside. In another bowl, cream together the shortening and sugar. Add egg and mix well. Add half of the crumb mixture. Add half of the milk and mix well. Add remaining crumbs mixture and milk. Fold in coconut and add vanilla. Pour into a greased 8 by 8 inch pan. Bake at 325°F for 45 minutes.
