    easy to mix by hand)
    2 cups flour (1 cup white, 1 cup whole wheat)
    3 tsps baking powder
    1 1/2 tsp. baking soda
    3 tsp cinnamon
    (optional 1 tsp allspice)
    3/4 to 1 cup honey
    1 tsp salt
    1/2 cup oil
    4 eggs
    2 cups coursely grated carrots
    1 8 oz can crushed pineapple (not drained)
    1/2 cup chopped nuts

    Frosting:
    1/4 cup butter
    1 pkg. cream cheese
    1 tsp. vanilla
    Powdered sugar

    Recipe



    Mix dry ingredients together; add sugar, oil, eggs, and blend well. Add
    carrots and pineapple. Fold in nuts and bake in 9 x 13 pan, 325 degrees for
    about 50 mins. (firm to touch, tooth pick comes out clean).
    After cooled, top with cream cheese frosting:
    Cream together: butter, cream cheese, vanilla, add until consistancy is correct
    for your liking powdered sugar
