3 lemons, sliced paper thin, seeds removed but peel still on
2 cups sugar
1 tbsp salt
4 well-beaten eggs
Butter, melted

Recipe
Toss lemon slices with 2 cups sugar in a non-metallic pan. Let stand overnight or 8 hours. Mix salt with eggs, then mix well with lemon mixture. Pour into bottom half of a double crust pie, then top with upper crust. Brush top crust with melted butter and sprinkle with sugar. Bake at 400 for 15 minutes, then reduce heat to 375 and bake for an additional 30 min.
