1/2 cup all purpose flour
1/8 teaspoon salt
1/4 teaspoon baking soda
1/4 cup butter
1/2 cup sugar
1 teaspoon grated lemon rind
2 teaspoons lemon juice
2 egg yolks; well beaten
2 egg whites
Recipe
Stir flour, salt and baking soda together.
Cream butter; gradually beat in sugar, creaming well after each addition. Stir in lemon rind, lemon juice and well beaten egg yolks. Add dry ingredients and mix well.
Beat egg whites until stiff but not dry and fold into batter. Pour into greased muffin pans.
Bake at 350°F 20 to 25 minutes. Frost as desired.
Yield: 1 dozen medium size cupcakes
