    1/4 c shortening
    1/2 c plus 1 T sugar
    1 egg beaten
    1 T grated orange rind
    1-3/4 c flour
    2 tsp baking powder
    1/2 tsp salt
    1/2 c milk
    3 T butter, melted
    1 c flaked coconut
    3/4 c orange marmalade

    Recipe



    Cream shortening and 1/2 c sugar.
    Add egg and rind.
    Blend dry ingredients.
    Add alternately with milk to creamed mixture, beat after each addition.
    Spread dough in greased 9" square pan.
    Brush top with 1 T butter.
    Blend coconut with marmalade; add remaining butter.
    Spread evenly over top of dough.
    Sprinkle with 1 T sugar.
    Bake 375º 35-40 min.
