Melted Ice Cream Cake

1 18-1/4 ounce box yellow cake mix
1 pint Ben and Jerry's Cherry Garcia Ice Cream, melted
3 large eggs
Chocolate Marshmallow Frosting Recipe
Preheat oven to 350°F. Grease and flour a 13"x9" pan.
Place cake mix, melted ice cream and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Scrape down the sides of the bowl with a rubber spatula. Increase speed to medium and beat for 2 minutes. Batter should be well blended, scrape down sides of bowl again if needed.
Pour the batter into the prepared pan, and place in the center of your oven. I topped this cake with chopped pecans.
Bake approximately 38-42 minutes, or until cake springs back when lightly pressed with your finger and starts to pull away from the sides of the pan. Cool cake in pan on wire rack. When cake is completely cooled you can frost it with your favorite glaze or frosting.
Chocolate Marshmallow Frosting
Yield: 1-1/2 cups - enough to frost a 9"x13" cake or tube cake
2 cups confectioners sugar
1/2 cup unsweetened cocoa powder
6 large marshmallows
4 tablespoons butter
1/3 cup plus 1 tablespoon milk
1 teaspoon vanilla extract
Sift the sugar and cocoa powder. Place marshmallows, butter, and milk in a saucepan over low heat, and stir until marshmallows are melted. Pour the sugar/cocoa mixture over the melted marshmallows mixture, and add the vanilla. Stir until the frosting is smooth and satiny. I am sure you can melt the butter, milk and marshmallows in the microwave. That's what I would do. This frosting should be used at once.
