Oatmeal Cake with Coco-Nut Topping

List of Ingredients
1 1/4 c. boiling water
1 c. quick rolled oats
1/2 c. butter
1 c. white sugar
1 c. brown sugar
2 eggs
1 1/3 c. flour
1/4 tsp. salt
1 tsp. baking soda
scant tsp. cinnamon
1 tsp. vanilla
Pour boiling water over oats. Set aside to cool. Cream butter with white & brown sugars & beat in eggs. Mix in cooled oats.
Add flour, salt, baking soda, cinnamon & vanilla. Mix well. Pour into a greased 7"x11" pan & bake at 350 degrees for 40 minutes or till done. Cool & cover with Coco-Nut Topping. (See below)
Coco-Nut Topping:
4 Tbls. butter
1 c. brown sugar
1/2 tsp. vanilla
1/8 c. cream
1/2 c. grated coconut
1/2 c. chopped pecans
Place all ingredients in saucepan & stir together till butter melts. Spread over cool Oatmeal Cake. Recipe
