Orange Cake w/Pears & Black Raspberry

Orange Cake, Serves 8-10
Ingredients
3 eggs, separated
3/4 cup sugar
3 tbls juice & rind of 1 orange
1/3 cup ground oats
1/8 cup flour Equipment
8 inch round loose bottom pan
Mixer with whisk
Juicer
Zester
Food processor
Rubber scraper
Dry and wet measuring cups
1) Preheat oven to 350 or convection oven to 325. Prepare pan by greasing bottom and sides fully.
2) In a medium bowl whisk together egg yolks, sugar, orange rind and juice, until it is thick and a pale creamy color.
3) Fold in the ground oats and flour, until smooth.
4) Whisk egg whiles until fairly stiff. Gently fold egg whites into oat mixture, until it is incorporated.
5) Spoon mixture into prepared pan.
6) Bake for 30-35 minutes, or until center springs back when lightly pressed.
7) Remove from oven, leave to cool.
Poached Pears, Serves 8-10
Ingredients
3 to 4 red pears
1 tablespoon lemon juice
1 cup fresh orange juice
Rind of 1 orange
1 cinnamon stick Equipment
Corer
Zester
Brush
Juicer
Large heavy saucepan
Wet measuring cup
1) Core pears, leaving them whole, brush the insides with the lemon juice.
2) Place pears in the sauce pan, add the orange juice, rind and cinnamon stick. Add enough cold water to almost cover the pears, making sure they remain standing.
3) Bring to boil, then reduce and cover to simmer. Let simmer for 20 minutes or until tender.
4) Remove pears, plunge them in cold water. Peel them, let cool before slicing.
Black Raspberry Glaze, Serves 8-10
Ingredients
1 cup seedless black raspberry all-fruit jam Equipment
Wet measuring cup
Small heavy saucepan
Mixer with whisk
Heat-proof rubber scraper
1) Slowly heat jam until dissolved.
2) Stir occasionally until reduced to half.
To Assemble Cake
1) Place cake on serving platter.
2) Place pear slices on cake top in a pleasing design.
3) Brush pears and cake with glaze.
