1/2 C butter softened
1/2 C packed brown sugar
2 egg yolks
1-1/2 Cup flour
1 tsp baking powder
Topping:
3/4 C sugar
2 envelopes unflavored gelatin
pinch salt
1 Cup cold water
1 Cup powdered sugar
1 tsp baking powder
1/2 tsp almond extract
2 drops green food coloring
2 drops red food coloring
1/4 C shredded coconut toastedRecipe
In a mixing bowl cream the butter and brown sugar
Beat in egg yolks one at a time
Combine flour and baking powder and add to the creamed mixture
Press into a greased 9" baking pan
Bake 325' for 15-20 minutes or till light brown. Cool.
In saucepan combine sugar, gelatin and salt. Stir in water. Let stand for 1 minute. Cook and stir over medium heat till it comes to a boil
Reduce heat and simmer for 10 minutes, stirring occassionally
Remove from heat and transfer to a mixing bowl
Add powdered sugar and beat on high until thick and creamy white about 12 minutes
Add baking powder and extract
Divide into 3 equal portions
Add green food coloring to one portion, and red to another. Mix well
Leave last portion white
Pour green mixture over crust, chill for three minutes
Top with white mix
Chill for 3 minutes, then top with pink
Sprinkle with coconut, cover and chill for 1 hour or till set
Serves 9
