Ricotta Sponge Cake

1 cup fresh ricotta
1/2 cup plain yogurt
1/2 cup cream
Sugar, to taste
1 sponge cake
Powdered sugar, for dusting
Strawberries, for serving
Whisk the ricotta until quite smooth, or blend it in a food processor, then mix in the yogurt. Whip the cream and sweeten to taste, then fold this into the ricotta mixture.
Spread the mixture over the bottom half of a split sponge cake, then replace the top half. The ricotta layer should be a good 1 to 1-1/2 inches thick. Dust with powdered sugar and serve with berries.
Yields about 6 to 8 servings.
