Texas Prune Cake

1/2 cup canola oil
1 1/4 cups sugar
1 cup low-fat buttermilk
1 tsp. vanilla ext.
2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1 whole egg + 2 egg whites
1/3 cup chopped walnuts
1 1/4 cups drained stewed prunes, chopped.
CARAMEL ICING
1/2 cup sugar
1/4 cup buttermilk
1/4 tsp. baking soda
2 Tbsp. butter Recipe
Oven 350�
Combine oil, sugar, buttermilk and vanilla in a mixing bowl.
In separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg and allspice. Add, a cup at a time to oil mixture.
Add egg and whites, then fold in nuts and prunes.
Bake in sprayed 10 inch tube pan for 50 minutes or until toothpick comes out clean.
About 15 minutes after cake is put into oven, place icing ingredients into a saucepan over med-low heat, cook, stirring constantly, to soft ball stage, 238�
5 minutes before cake should be done, pour icing over the cake and let it finish baking.
Cool 10 minutes then remove from pan to wire rack.
