Thunderbolt Chocolate Cake

2/3 cup butter
1 1/2 cups sugar
3 eggs
1 tsp. vanilla extract
2 1/4 cups sifted all-purpose flour
1/2 cup unsweetened cocoa
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup water
2/3 cup rinsed, drained and chopped sauerkraut Recipe
Cream butter well with sugar. Beat in eggs and vanilla.
Sift together dry ingredients; add alternately with water to egg mixture. Stir in sauerkraut.
Turn into 2 greased and floured 8" square or round baking pans. Bake at 350 degrees for 30 minutes, or until cake tests done. Fill and frost with mocha whipped cream.
Mocha Whipped Cream
1 1/2 cups heavy cream
3 tbsp. sugar
1 tbsp. instant coffee
2 tsp. unsweetened cocoa
2 tbsp. rum (optional)
Whip together all ingredients until soft peaks form.
Yields about 3 cups.
