    Barbecue Beef Over Corn Muffins

    1 pound hamburger
    1 (14 1/2-ounce) can diced tomatoes
    1 (11-ounce) can Mexicorn, drained
    1/2 cup barbecue sauce
    1 1/2 teaspoons chili powder
    4 to 8 corn muffins, split

    Recipe



    Preheat broiler. Brown hamburger, stirring to break up. Drain. Add tomatoes, Mexicorn, barbecue sauce and chili powder. Bring to a simmer. Cook for 5 minutes to heat through.

    Arrange corn muffins cut side up on baking sheet. Broil until slightly toasted. Spoon hamburger mixture over corn muffins.

    Serving quantity: Serves 4.
