Cheesy Tuna Enchiladas

1 pkg Lipton Spanish rice
1 pkg Mexican style 4 cheese blend
1 can (6oz) solid white albacore tuna, drained
1 small can sliced olives, drained
1/4 cup cilantro (optional)
1 teaspoon ground cumin
1 can (10oz) enchilada sauce
4 (10") flour tortillas
Recipe
Heat oven to 375 degrees F.
Cook rice according to pkg directions, then mix in one cup of the cheese, the tuna, olives cilantro, cumin and 1/2 Cup enchilada sauce. Divide mixture among the 4 tortillas and roll up jelly style. Place seam side down in a greased (I used Pam) casserole dish and top with remaining enchilada sauce and cheese. Cover, and bake 15 minutes. Remove cover and cook another 5 minutes.
Supper easy and very good.
