    Mexican Vegetable and Beef Skillet

    1/2 pound ground beef
    3/4 cup onion, chopped
    1/2 cup bell pepper
    1 cup rice, uncooked
    1 cup tomatoes, chopped (about 2 medium)
    1 cup fresh, frozen, or canned mixed vegetables, chopped
    1-2 tablespoons chili powder
    1 tablespoon oregano
    1 teaspoon salt
    1 cup (4 ounces) shredded cheese (Monterey jack or cheddar)
    2 cups water

    Recipe



    Brown beef in a large skillet over medium-high heat (350 degrees in an electric skillet). Drain fat.

    Add onion, and peppers and cook, stirring, 8-10 minutes until vegetables are soft.

    Add rice, tomato, mixed vegetables, 2 cups water, and spices. Mix well and bring to a boil. Reduce heat to medium low , cover and simmer for 20 minutes. Add more water if needed.

    Sprinkle with cheese and serve.

    Servings: About 6 servings, 1 cup each about 6 servings, 1 cup each
