Taco Filled Peppers

1 lb ground beef
1 ( 1 1/4 oz ) pkg taco seasoning mix
1 ( 8 oz ) can kidney beans, drained and rinsed
1 cup salsa
4 medium green peppers
1 medium tomato, chopped
1/2 cup shredded cheddar cheese
1/2 cup sour cream
Recipe
In a large skillet, brown ground beef. Drain. Stir in taco seasoning, kidney beans, and salsa. Bring to boil. Reduce heat and simmer for 5 min. Cut peppers in halves lengthwise; remove and discard seeds and stem. Immerse peppers in boiling water for 3 min. Drain. Spoon about 1/2 cup meat mixture into each pepper half. Place in a ungreased 13 x 9 x 2 inch baking dish. Cover and bake at 350 for 15 to 20 min or until peppers are crisp and tender and filling is heated through. Top each with tomato, cheese, and a dollop of sour cream. Yield 4 servings.
