    4 whole fryer chicken breasts, halved and boned
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 can (16 oz.) sauerkraut drained dry (press excess liquid out)
    4 slices (4x6-inches each) Swiss cheese
    1 1/4 cup bottled Thousand Island dressing
    1 Tablespoon chopped parsley

    Recipe



    Preheat oven to 325 degrees F.

    In greased baking pan, place chicken. Sprinkle wih salt and pepper. Place sauerkraut over chicken; top with Swiss cheese. Pour dressing evenly over chicken and cheese.

    Cover tightly with foil and bake in a 325 degree F. oven for 1 1/2 hours. Remove from oven and uncover. Sprinkle with chopped parsley.

    To serve lift each breast piece with spatula onto platter so sauerkraut and cheese stay in place. A good amount of juice will be in baking pan. The juice may be used to serve over potatoes.

    Makes 4 generous servings.
