Beefy Bacon Chicken
Source of Recipe
Internet
List of Ingredients
Serves 4...
10 chicken tenderloins (or equivalent in some other boneless chicken)
half of one medium yellow onion
bacon (I used about 10 slices of thick-cut bacon)
mushrooms (optional)
Worcestershire Sauce
1 can Campbells beef broth
Recipe
Chop bacon and onion. Cook together in large skillet, bacon should be cooked, but should not be crispy. Remove bacon and onion, leaving grease in skillet, place bacon/onion to the side, but do NOT drain or dry.
Place chicken in skillet and cook in bacon grease. Add a little oil if there isn't enough bacon grease to keep the chicken from burning. Cook a little above medium for 4 or 5 minutes from the time when you hear the chicken start to sizzle.
Turn chicken over. Put bacon/onion and chopped mushrooms over the top of the chicken. Shake Worcestershire Sauce over everything to taste. (don't use much, or finished recipe will be too salty) Cook for another 4 or 5 minutes.
Pour can of beef broth over chicken, add enough water so chicken is completely covered. Continue to cook at same temperature until broth is bubbling.
Turn heat down to medium-low, cover pan, and let cook for 40 minutes.
Serve with rice or mashed potatoes, whatever vegetables you like.
