Bob Bogey Stuffed Chicken Breast

4 boneless chicken breast with skin still attached
8 slices of bacon
fresh broccoli, blanched
fresh garlic
1 white onion chopped
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
olive oil
salt and pepper
toothpicks
Recipe
Step 1: Chop blanched broccoli.
Step 2: Heat oil on sauté pan. Add broccoli, minced garlic and chopped onions.
Step 3: Anthony’s "secret agent" is crispy bacon. In a bowl, transfer the broccoli and crumble bacon over broccoli.
Step 4: Add shredded cheeses into the bowl.
Step 5: Season the chicken breast under the skin with salt and pepper to taste. Take a portion of the broccoli cheese mixture and stuff it under the skin.
Step 6: Close the skin with toothpicks
Step 7: Place chicken onto sauté pan with hot oil, and sear chicken on both sides for about 2 minutes. Finish cooking in the oven for another 30 minutes or until done.
