    2 chicken breasts, butterflied to even thickness
    1 pkg boursin cheese (these are small pkgs)
    1/2 pkg frozen spinach, thawed and squeezed dry
    (or 5 oz fresh spinach, blanched and coarsely chopped)
    oil
    bread crumbs
    garlic powder
    margarine or butter


    Recipe



    In a small bowl, crumble the Boursin cheese with a fork. Sprinkle the spinach over the cheese to avoid bunches and mix until evenly blended. Fill the chicken breast (smooth side down) with 1/2 the mixture. Press the mixture into a nice compact lump and then wrap the chicken around it to cover any exposed area of the stuffing. Try to maintain an even thickness of the chicken layer. Place the chicken, smooth side up, in a greased baking dish or pan. Add a pat of butter or margarine on top, sprinkle with garlic powder and bread crumbs. Repeat with second piece. Bake at 375 for 25 minutes.

    Serves 2.
