Chicken Bacon Blues

4 chicken breasts, boneless with skin
8 strips bacon
1/2 cup crumbled blue cheese
olive oil
salt
pepper
Those guys with the tall, funny looking, pleated hats - you know, real chefs - come up with these fancy names for their fancy dishes. Well grillers can come up with goofy names too. This is an easily barbecued mutation of Chicken Cordon Bleu.
Cook bacon so that it is still limp, not crispy, and chop. Separate skin from breast and lightly brush with olive oil, making sure to get under the skin. Lightly salt and pepper the chicken, again making sure to season under the skin. Mix bacon and blue cheese together, separate into 4 equal portions and stuff the mixture beneath the skin.
Grill skin side down over medium/low direct heat for 2 minutes, turn and grill for 2 more minutes then move chicken to indirect heat and cook for about 20 minutes, or until done.
