Chicken Breast Radzvilla

6 boned chicken breasts, skinned
1 cube butter
1/4 cup sliced almonds
flour
salt and pepper
3/4 cup chicken stock
3/4 cup ruby Port
1 1/2 cups whipped cream
3 Granny Smith apples, peeled, cored and cut into sixths

Flatten each chicken breast slightly. Melt 2 Tbsps butter over medium heat. Add almonds and stir until golden brown, about 4 minutes. Set aside. Lightly dredge chicken in flour; shake off excess. Melt 4 Tbsp. butter in heavy large skillet over medium-high heat. Add chicken and cook until just springy to touch, about 4 minutes per side. Sprinkle with salt and pepper. Transfer to hot platter and keep warm. Add stock and Port to same skillet and boil until reduced by half, scraping up any browned bits. Add cream and boil until reduced to saucelike consistency. Meanwhile, melt remaining butter in heavy medium skillet over medium heat. Add apples and cook until just tender, stirring frequently, about 5 minutes. Arrange 1 chicken breast and 3 apple slics on each plate. Pour sauce over chicken, sprinkle with almonds.
