    Chicken Breasts with Citrus Glaze

    3 medium oranges
    1 tablespoon olive oil
    4 single chicken breasts fillets
    1/2 cup chicken stock
    1/2 cup sweet orange marmalade

    Recipe



    Using a vegetable peeler, cut strips of rind from one orange. Remove and discard white pith. Cut strips into matchstick size pieces; set aside. Squeeze juice from oranges; you will need 1 cup; set aside.

    Heat oil in large frying pan; cook, chicken until browned brown sides. Reduce heat, cook covered until chicken is cooked through. Remove chicken from pan; cover to keep warm.

    Add juice, stock, and marmalade to same pan; stir over heat until marmalade melts.

    Add rind, bring to a boil; simmer stirring; about 10 minutes or until thickened slightly.

    Return chicken to pan, coat with glaze.
