Chicken Chalupas

2 pounds chicken breasts
1 small onion
2 cloves garlic, minced
1 pint sour cream
salt
16 to 18 tortillas
oil
1 pound Cheddar cheese, shredded
1/2 green pepper, sliced thin
1 4 ounce can green chiles

Recipe
Cook chicken in salted water until tender. Remove from stock and pull chicken off bones into bite-size pieces. Grate onion and garlic into sour cream. Add a little salt and a little chicken stock to thin cream slightly. Soften tortillas in hot oil, place on paper towels to drain. Wrap chicken and all but 1 cup of the cheese in tortillas. Place one layer of rolls in casserole, sprinkle with some of the green pepper and chilies, then spread with part of the sour cream mixture. Sprinkle with a litle of the reserved cheese. Repeat layers until all ingredients are used, ending with sour cream. Sprinkle with paprika. Let stand at least 8 hours in refrigerator before baking. Bake at 350 degrees 1 hour. Makes 6-8 servings.
