    List of Ingredients




    1 fresh coconut, halved, (if available)
    5 lbs stew fresh chicken
    5 cups boiling chicken stock
    1 minced onion
    3 Tbsp curry powder
    2 Tbsp melted butter
    4 Tbsp chicken fat
    2 cups fresh coconut milk
    5 Tbsp flour
    1/2 tsp minced ginger root
    2 tsp chopped fine mango chutney
    1 tsp Ajinomoto
    salt
    Cooked Rice
    Garnish: Fresh grated coconut

    Clean chicken cover with water and simmer until tender (1-1/2 to 2) hours then remove from liquid.

    Remove bone from chicken and cut to serving portions.

    Cook onion in 3 Tbsp chicken fat until lightly browned; remove and brown the chicken in chicken fat and butter; add curry powder and flour; cook 2 minutes; add chicken stock and remaining ingredients, stirring constantly, and cook until thickened.

    Serve in half fresh coconut. Place hot rice in center of coconut and chicken curry over the rice. Sprinkle with grated coconut.
