4 boneless and skinless chicken breasts
extra virgin olive oil (just enough to coat the bottom of a frying pan)
granulated garlic
chili powder
pepper
2-2½ c. Prego traditional spaghetti sauce - seasoned with chili powder chopped cilantro to taste
chopped scallions
chopped cilantro
sliced avocado
sliced fresh tomato
Recipe
Preheat 350 degree oven. Wash and pat dry the chicken breasts. Season to taste with granulated garlic, chili powder and pepper. Heat olive oil and sauté the breasts on both sides approximately 30 seconds just to sear. Place breasts in a baking dish. Mix the spaghetti sauce with the chili powder to taste and add a touch of hot salsa of your choice (this is optional dependent on your taste for very spicy food). Add some chopped cilantro. Place sauce to cover each breast. Place two slices of tomato on top and add more sauce to cover the tomato. Bake covered in a pre-heated 350 degree oven approximately 35 - 40 minutes. Remove and spoon some of the sauce over each breast. Top with sliced avocado, chopped scallion and cilantro to taste. Serve at once or you can keep it in the refrigerator for several days and reheat in the microwave on high for approximately one minute per breast.
