    6 ancho chilies, fresh or dried, chopped
    2 cups cooked tomatoes
    1 large onion, chopped
    1 clove garlic, peeled
    1/2 cup salted peanuts or 1/2 cups peanut butter
    1 tortilla or 1 piece toast, torn in pieces
    1/3 cup raisins
    2 Tbsp. sesame seed
    1/4 cup oil
    1 Tbsp. sugar
    1/4 tsp anise
    1/4 tsp cinnamon
    1/4 tsp cloves
    1/4 tsp coriander
    1/4 tsp cumin
    1 cup chicken stock
    1 ounce (1 square ) unsweetened chocolate
    salt and pepper
    3 cups diced cooked chicken (or turkey)

    Combine chilies, tomatoes, onion, garlic, peanuts, tortilla, raisins, and sesame seed. Put a small amount at a time into blender and blend to make a thick puree. Heat oil in a large skillet. Add the puree and cook, stirring constantly, about 5 minutes. Stir in sugar, anise, cinnamon, cloves, coriander, cumin, and stock. Bring to boiling, reduce heat, and simmer. Add chocolate and continue simmering, stirring constantly, until chocolate is melted and blended into sauce. Stir in chicken pieces and simmer about 10 minutes. Absolutely delicious. You can use this sauce for tamale filling, but it must be cooked down until it is thicker. Save some of the sauce for topping the tamales too. Good over hot rice!!!
