    8 lb. ground fresh chicken
    1 c. ground fresh pork
    1 oz. black pepper
    4 oz. Kosher salt
    1 c. fresh sage
    1 yellow onion, minced
    2 Tb. garlic, chopped
    1 c. fresh parsley, chopped
    1 tsp. Red Chili flakes

    Recipe



    Sweat onion and garlic in a pan until cooked, but no color. Season with a little salt (not the 4 oz.) and red chili flakes.
    Add parsley and sage, cook for one minute more. Pull from the pan and allow to cool.
    Mix ground chicken and pork together. Add the Kosher salt, pepper and cooled herb-onion mixture. Cook a small piece to taste for seasoning. If the seasoning is fine, then portion into two ounce portions onto sheet pans.

    Finishing touches:

    Toast two pieces of foccacia bread and set aside.
    In boiling and vinegared water, add two whole eggs. Cook for four minutes and drain onto paper towels.
    Sear sausage and place in a hot oven for six minutes or until done. Drain onto paper towels.
    Place toasted bread onto a plate and top with sausage. Place the poached eggs on top and then garnish with the hollandaise. (Recipe follows.) Serve with hashed brown potatoes and fresh fruit.
    Yield: 64 patties
