2 lbs chicken breast - cooked and shreaded
2 cups Monterey Jack cheese - grated
1/4 cup sliced green onions
2 dozen corn tortillas
vegetable oil for frying
salt
Recipe
Combine chicken, cheese, and green onions in a large mixing bowl.
Heat 1/4 inch of oil in a frying pan.
For each tortilla, dip in pan to soften.
Remove and let cool slightly.
Roll about 2 tablespoons of chicken mixture into tortilla.
Retrn to oil and fry until golden brown.
Transfer to plate lined with paper towels.
Salt generously.
