    Cilantro Chicken with Rice

    Chicken(quartered)
    Giblets (chopped)
    2 cups rice
    1 small onion (chopped)
    1/2 bell pepper(chopped)
    1 small can stewed tomatoes (chopped)
    2 cans chicken broth
    garlic
    cilantro
    Portabello mushroom (sliced)
    Salt/peper to taste



    Recipe



    Pour olive oil into a large sauce pan with 3 tablespoons of butter. Sautee all ingreadients with the exception of cilantro and rice.

    After all the vegetables have been partially cooked in the mixture, pour in broth with the salt and pepper. In a seperate sauce pan, toast rice with a little extra virgin olive oil. Once rice is slightly toasted, pour into sauce pan mixture, return to a boil, then lower heat to medium until chicken and rice are cooked.

    Once chicken is boiling, add chopped cilantro and garnish with finely chopped scallions. Let stand for 10 minutes and serve.
