    Creole-Peach Chicken Breasts

    4 chicken breast halves, bone-in with skin
    Salt and pepper
    1/2 cup peach preserves
    2 T. Creole-style coarse-grain mustard

    Recipe



    Preheat oven to 375 degrees. Season chicken breast
    halves with salt and pepper and arrange in a shallow
    baking dish. Melt preserves in a small saucepot and
    stir in mustard; keep warm. Bake chicken for 20
    minutes. Brush with peach sauce and return to oven
    for 15 minutes, or until juices run clear when thickest
    part is pierced with a skewer. Baste 2 more times
    during final 15 minutes. Serve with baked potato and
    steamed zucchini tossed with a soy sauce and ground
    pepper. Serves 4.
