Garlic and Herb Broiled Chicken

4 boneless, skinless chicken breasts
6 TBS salted butter, divided
2 tsp fresh lemon juice
½ tsp salt
¼ tsp white pepper
3 TBS Garlic and Herb Marinade
¼ pound mushrooms, sliced
½ cup white wine
Recipe
Preheat broiler.
Roll the chicken breasts about a half inch thick using a rolling pin or pound evenly with a kitchen mallet. Melt 4 TBS butter with the lemon juice, Garlic and Herb Marinade, salt, and white pepper. Broil the breasts for 6 to 8 minutes on each side basting with the sauce.
Saute the mushrooms in the remaining 2 TBS butter, add the white wine, and cook down slowly.
When the chicken breasts are done, remove to a hot platter and pour the broiler pan drippings into the mushroom sauté, stirring to combine. Simmer for 2 to 3 minutes. Pour the combined drippings and mushrooms over the chicken breasts and serve with Orange Candied Yams, or side dishes of your choice.
