four split chicken breasts
Kosher salt to taste
juice of one big lemon
one-fourth cup good olive oil
one teaspoon dried oregano
three cloves garlic, pressed
one-half teaspoon sugar
Recipe
Rinse chicken breasts and pat dry with paper towels. Toss with Kosher salt and set aside. Put the rest of the ingredients in a bowl and whisk until well-blended. Pour over chicken and mix well. Cover and keep this mixture in the refrigerator overnight. Broil chicken until juices run clear - do not overcook. Serve with hot pasta and grilled fall vegetables.
