    Serves 4

    1 3 1/2 to 4 pound Chicken
    1 tbsp. fresh marjoram
    1 tbsp. fresh oregano
    2 tbsp. fresh basil
    4 tbsp. fresh parsley
    1 tsp. fresh thyme
    2 tbsp. fresh minced garlic
    3 tbsp. olive oil
    1 tbsp. balsamic vinegar
    1/2 tsp. fresh ground black pepper
    1 tbsp. kosher salt
    1 cup water

    Recipe



    Pull giblet bag out of chicken and disgard. Rinse chicken with cold water. Combine seasonings. Rub on chicken. Place in roasting pan with water. Roast at 325° degrees until an internal temperature of 180° - 185° degrees, use an instant read thermometer not your large turkey thermometer. Finish on grill to get beautiful marks and a crisp skin. Serve with grilled corn and campfire potatoes.

    Grilled Corn
    Sock 4 ears corn in water 10 minutes brain for 10 minutes to one hour.Place corn husk and all on grill. Turn every 3 minutes. Cook 11 minutes. Serve.

    Campfire Potatoes - Serves 4
    1 1/2 lbs. red skin potatoes, washed and quartered
    4 oz. whole butter
    salt and pepper to taste

    Combine ingredients. Place in foil packs. Cook over coals. Turn frequently. Cook until tender (20 minutes)
