    1 whole chicken, rinsed and patted dry
    1 lemon, zested
    IN A SMALL BOWL, MIX
    1/4 cups olive oil
    1 Tbsp fresh Rosemary, minced
    plus 2 whole sprigs to insert in cavity
    2 garlic cloves, minced
    1 Tbsp of sea salt
    juice of one lemon

    Recipe



    Apply the lemon zest to the inside cavity of the chicken, add a generous amount of herbed olive oil, and use the rest to rub down the chicken completely. Ok to squeeze lemon juice into cavity. PUt into a 400-450 preheated oven. Roast about an hour until crisp and golden and juices run clear. Serves 4-6
