Maple Drumsticks with Peach Brandy Sauce

1 cup chicken broth
1/3 cup maple syrup
¼ cup orange juice
1 Tbsp. dijon mustard
1 Tbsp. brandy (optional)
1 tsp. kosher salt
¼ tsp. white pepper, ground
Drumsticks
12 drumsticks
1 cup pecans, finely chopped and roasted (optional)
¼ cup maple syrup
1 Tbsp. butter
2 cups apple wood chips, soaked for twenty minutes and drained for 10 minutes prior to grilling
Peach Brandy Sauce
1/3 cup sweet yellow onions, diced
1 Tbsp. olive oil
3 Tbsp. brandy
3 Tbsp. maple syrup
3 peaches, skin removed and diced (can use nectarines)
1 fresh red chile pepper, finely diced (optional)
2 Tbsp. sour cream (optional)
Recipe
Mix all ingredients together and add chicken. Make 4 hours to two days ahead.
Cooking
Preheat grill to 550 degrees with wood chips in smoker box. Remove chicken from marinade and place on rack for five minutes prior to grilling. When smoker is producing a fair amount of smoke, lower temperature to 400 degrees. Heat maple syrup and butter until melted. Place chicken on grate and grill for 3 minutes, ¼ turn for 3 minutes and repeat twice lightly basting with maple syrup (internal temperature of 165 degrees).
Remove from grill and lightly coat roasted pecans with maple syrup and sprinkle pecans on chicken. Serve with Peach Brandy Sauce.
Makes a great chilled picnic or boating lunch.
Peach Brandy Sauce
Heat olive oil in sauce pan over medium-high heat, then add onion and sauté for two minutes. Add all other ingredients until sauce just begins to boil and then lower to medium-low stirring occasionally until desired thickness, approximately 5 minutes. (Optional) Mix in sour cream when sauce is at desired thickness and off burner.
