Oven-Fried Lemon Marinated Chicken

4 boneless, skinless chicken breasts
1 tablespoon dark soy sauce (or regular soy sauce)
1 teaspoon salt (divided)
3/4 teaspoon pepper (divided)
2 cloves garlic, crushed or minced
1 tablespoon vegetable oil
3 tablespoons double-strength chicken broth
1/2 cup lemon juice (about 2 lemons)
2 tablespoons grated lemon peel
1/2 cup all-purpose flour (plus more if needed)
1 to 2 teaspoons paprika
Garnish: fresh parsley and lemon slices (optional)
Combine chicken breasts with soy sauce, 1/2 teaspoon salt, 1/2 teaspoon pepper, garlic, oil, broth, lemon juice and lemon peel in a large resealable plastic bag. Refrigerate 1 hour or more.
Preheat oven to 350 degrees. Remove chicken from marinade and save marinade.
Combine flour, paprika, and remaining salt and pepper in medium bowl (or another plastic bag). Add chicken to flour mixture and coat each breast completely. Arrange chicken in a 9-inch square pan that has been coated with nonstick cooking spray. Spray tops of chicken, also.
Drizzle 1/4 cup marinade over chicken and bake 20 minutes, uncovered. Pour remaining marinade over chicken and bake 15 to 20 minutes until done. Garnish with lemon slices and fresh parsley if desired.
