1 large roasting chicken
4 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper

Combine all spices in small bowl. Remove giblets from chicken, rinse and pat dry. Rub entire spice mix into the chicken, inside and out, evenly distributing deep into the skin. Put chicken into zippered plastic bag, seal, and refrigerate overnight.
Preheat oven to 250. Stuff chicken with chopped onion and set in shallow baking pan. Roast uncovered for 41/2 to 5 hours. After first hour, baste every half hour with pan juices. Let rest 10 minutes before carving.
